INGREDIENTS
1 piece of eggplant
1 teaspoon of salt
1 teaspoon of black pepper
10 oz of ground pork
1 bell pepper, diced
1 tomato, chopped
Half of an onion, diced
2 oz of tomato sauce
Shredded cheese (as much as you like)
INSTRUCTIONS
1.Start by preparing your eggplant and slice the eggplant into approximately 0.5-inch thick pieces. Place them in a SEASON•SEAL vacuum container, sprinkle with salt, then vacuum seal to marinate for 10 minutes, drawing out any excess moisture.
2.Next to prepare for the cooking of this dish make sure to preheat your oven to 200°C (392°F).
3.While the oven is heating up you may begin the meat sauce by cooking the pork in a pan, stir-fry style until the ground pork is browned. Add the diced onion, chopped tomato, and diced bell pepper.
4.Stir in the tomato sauce and cook until the vegetables are tender and the mixture is well combined.
5.Next let’s prepare the slices of eggplant by releasing the vacuum container, wiping off excess moisture and salt from the eggplant slices, and patting them dry.
6.Now it’s time to assemble our dish, use your baking dish of choice and layer the eggplant slices and meat sauce alternately until the dish is full. Then, generously sprinkle shredded cheese over the top of the assembled dish.
7.Once your dish is assembled and ready to go, place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly with a golden-brown crust.
