Cheese Eggplant

INGREDIENTS

1 medium eggplant
1 teaspoon of salt
1 teaspoon of black pepper
10 oz of ground pork
1 bell pepper, diced
1 tomato, chopped
Half of an onion, diced
2 oz of tomato sauce
Shredded cheese (as much as you like)

INSTRUCTIONS

  1. Slice the eggplant into 0.5-inch thick pieces. Place them in a SEASON•SEAL vacuum container, sprinkle with salt, then vacuum seal to marinate for 10 minutes, drawing out any excess moisture.
  2. Preheat oven to 200°C (392°F).
  3. Begin the meat sauce by cooking the pork in a pan, tossing until the ground pork is browned. Add the diced onion, chopped tomato, and diced bell pepper.
  4. Stir in the tomato sauce and cook until the vegetables are tender and the mixture is well combined.
  5. Releasing the vacuum on eggplant container. Wipe off excess moisture and salt from the eggplant slices. Pat dry.
  6. Use your baking dish of choice and assemble: layer the eggplant slices and meat sauce alternately until the dish is full. Generously sprinkle shredded cheese over the top.
  7. Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly with a golden-brown crust.
